Ingredients:
1 lb chicken breast, diced
Salt, pepper, garlic powder, and Italian seasoning (for seasoning chicken)
1 tbsp olive oil
6 oz (2 cups) penne pasta
3 cups low-sodium chicken broth
1 cup spinach
1 cup cherry tomatoes, halved
3 tbsp pesto
2 tbsp heavy cream
Red pepper flakes (optional)
Salt and pepper (to taste)
Grated parmesan (for serving)
Instructions:
Cook Chicken
Season diced chicken with salt, pepper, garlic powder, and Italian seasoning.
Heat a skillet over medium heat, add olive oil, and cook chicken until cooked through. Remove from pan and set aside.
Cook Pasta
In the same skillet, add penne pasta and chicken broth. Bring to a boil, then reduce to a simmer.
Cook for about 10 minutes, stirring occasionally, until most of the broth is absorbed and the pasta is tender.
Combine Ingredients
Add cooked chicken, spinach, cherry tomatoes, pesto, heavy cream, and red pepper flakes to the skillet with the pasta.
Stir everything together and cook until spinach is wilted and everything is heated through.
Season and Serve
Season with salt, pepper, and a sprinkle of grated parmesan. Enjoy!
