I've made this a number of times and I love it every time! I like to have it with some jalapeño kettle chips. And instead of roasted red pepper I usually just make it with red or green bellpepper and it turns out great!
This was delicious! The flavors worked together surprisingly well. I was intimidated at first because it made such a huge amount for just myself, but I’ve found that it disappeared from my fridge quickly and I didn’t get tired of it :)
Wow, this is so good. I added raisins to it, for a touch of sweetness.

Love this salad so much!!!! I just switched the roasted peppers to some small sweet peppers :)
would it be a good idea to emulsify the dressing with a immersion blender?
I do have to say, great dish!—Its hard for me to make something appetizing, healthy and filling
Would I have to add the avocado before serving to avoid it turning brown?
The dressing (and keeping it in a container) should keep it from turning brown. I just made it, so I’ll see how it goes!
